No Bake Peanut Butter Bars
Ingredients
- 1 cup butter melted
- 2 cups graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)
- 2 cups confectioners’ sugar
- 1 cup + 4 tablespoons peanut butter
- 1 1/2 cups semisweet chocolate chips
Directions
- In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended.
- Press evenly into the bottom of an ungreased 9×13 inch pan.
- In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth.
- Spread over the peanut butter layer.
- Refrigerate for at least one hour before cutting into squares.

We made these King Daddy Club sandwiches for lunch today after walking for more than an hour on one of the most beautiful autumn days ever. I picked this ripe tomato from the front yard garden. Having a veggie garden really makes me appreciate the little things. Even though times are tough, Life is sweet!
“Now here’s a simple, cool idea: Freeze slices of lemon in a cupcake baking sheet, then add to your water pitcher for coolness and a twist of lemon. Love it. Reminds me of a coffee shop on the North Fork that adds frozen coffee ice cubes to ice coffee so it won’t get watered down. Brilliant!”
I bet this would be good done with cucumber slices too.
